- 3 large beets, peeled, quartered and sliced
- 1/2 teaspoon sea salt
- 3 tablespoons olive oil, divided
- 2 leeks, the white and light green parts only, thinly sliced
- 1/4 teaspoon black pepper
- 6 ounces soft, mild goat cheese, crumbled
- 1 to 3 teaspoons, horseradish (optional and to taste)
