  • 12 ounce Beer, Any Brand, 1 Btl/can
  • 1/2 c. Celery, Finely Minced
  • 1 tsp Salt
  • 1/4 tsp Nutmeg, Grnd
  • 1 x Pepper, Dash Of
  • 2 Tbsp. Margarine Or possibly Butter
  • 1/2 c. Carrot, Finely Minced
  • 2 c. Chicken Broth
  • 1 tsp Cumin, Grnd
  • 1 x Cloves, Grnd, Dash of
  • 1 c. Dairy Lowfat sour cream
  • 1 c. Cheese, *

  1. Use Cheddar Or possibly Monterrey Jack cut into 1/4-inch Cubes. (4 ounce)
  2. Cook and stir onion in margarine in 2-qt saucepan till tender. Stir in beer, carrot and celery. Heat to boiling; reduce heat. Cover and simmer 10 min. Stir in remaining ingredients except lowfat sour cream and cheese.
  3. Heat to boiling; reduce heat. Cover and simmer for 30 min. Remove from heat; stir in lowfat sour cream. Sprinkle with cheese.
