- 12 Small Corn Tortillas
- 2 c. Shredded Cheddar Cheese
- 1.5 c. Cooked Beef (shredded or ground beef)
- 1 Medium Onion, minced
- Enchilada Sauce, homemade, canned or dry package reconstituted.
- Optional: 1/4 c. Peppers, diced (more or less to taste)
- Another sidenote: Here's an example of enchilada sauce mixes you can get at the store. You just have to add water! :)
