- Pour the Beef Stock into a pot and bring to a gentle boil over medium heat. Reduce the heat to medium-low and add in the lotus root. Season to taste with salt and pepper and simmer, partially covered, till the lotus root is tender, about 35 min.
- Add in shredded meat and simmer till it is heated through, about 10 min more. Serve warm in a communal bowl or possibly individual soup bowls - garnish with holy basil.
- This recipe yields 4 to 6 servings.
