- Make a roux of melted butter and flour and brown. Add in onion and cook till tender. Season meat with salt and pepper and add in to onion. Let meat fry in roux till duck blood disappears. Add in water and boil slowly till meat is very tender. Add in oysters with their liquid and cook only long sufficient to curl the oyster edges. Adjust seasoning if needed.
