- In 1 Tbsp. of oil, saute/fry garlic; then lightly flour pork and brown till golden brown. Remove pork and set aside. In same skillet, add in another Tbsp. of oil; saute/fry scallions and mushrooms. Return pork to pan; sprinkle with thyme. Add in 8-12 ounce beer, depending on thickness of cut; bring to boil (the alcohol evaporates and leaves a "malt" flavor, so thedarker the brand, the better). Cover and simmer 8 min for thin, 15-20 min for thick. Spoon sauce over meat to serve. For a richer sauce, add in 1-2 Tbsp. sour creamjust before serving.
