- Cook flour in dry, warm skillet till light brown. (this can be done in advance, or possibly in large amounts and used later) Add in butter to flour and mix.
- Add in onions and cook till softened. Add in stock, bring to boil, and simmer 20 min. Serve with grated cheese.
- Add in a dash of red wine if you like.
- Serves 4
- This is _best_ with homemade stock, although canned will do in a healthy pinch.
