.%20Those%20are%20baked,%20packaged%20and%20several%20containers%20are%20secretly%20stashed%20where%20I%20will%20hopefully%20find%20them%20again%20during%20Christmas%20week.%3C/p%3E%3Cp%3EThe%20cookie%20baking%20is%20also%20gearing%20up%20with%20a%20couple%20of%20batches%20of%20brownies%20stashed%20in%20the%20freezer%20and%20the%20remnants%20of%20a%20test%20batch%20of%20a%20cool%20new%20holiday%20cookie%20from%20Switzerland,%20Basler%20Brunsli.%20I%20spied%20this%20naturally%20gluten-free%20recipe%20in%20my%20vintage%20cookbook%20%22Woman's%20Day%20Gifts%20From%20Your%20Kitchen%22%20(NY:%20Simon%20and%20Schuster,%201976),%20and%20after%20experimenting%20with%20it,%20I%20am%20smitten%20with%20this%20aromatic,%20chewy%20cookie.%3C/p%3E%3Cp%3EThe%20cookie%20calls%20for%20ground%20almonds.%20I%20stocked%20up%20on%20whole%20almonds%20from%20the%20bulk%20bin%20of%20my%20grocery%20store%20($7.00%20per%20pound)%20and%20then%20ground%20them%20up%20in%20my%20blender.%20The%20cookie%20also%20called%20for%20kirsch,%20also%20known%20as%20kirschwasser,%20which%20is%20a%20cherry%20liqueur.%20My%20local%20liquor%20store%20had%20a%20small,%20dust-covered%20bottle.%20I%20suppose%20the%20rise%20of%20cherry-flavored%20cough%20syrup%20and%20other%20cold%20remedies%20has%20diluted%20the%20popularity%20of%20this%20particular%20alcohol.%20It%20does%20have%20a%20strong%20cherry%20scent%20and%20flavor,%20but%20it%20is%20perfect%20for%20offsetting%20the%20chocolate%20and%20clove%20elements%20of%20this%20wonderful%20cookie.%3C/p%3E%3Cp%3EI%20had%20to%20wrestle%20with%20the%20dough%20a%20bit.%20The%20cookbook%20recipe%20calls%20for%20one%20to%20roll%20out%20the%20dough%20on%20a%20board%20lightly%20sprinkled%20with%20sugar%20and%20then%20cut%20out%20the%20cookies%20in%20the%20traditional%20rosette%20shape.%20However,%20the%20raw%20cookie%20dough%20was%20so%20moist%20that%20it%20slowly%20sloshed%20around%20my%20mixing%20bowl%20and%20I%20couldn't%20see%20handling%20it%20even%20between%20waxed%20or%20parchment%20paper.%20I%20tried%20freezing%20the%20dough,%20but%20the%20kirsch%20kept%20the%20dough%20from%20freezing%20or%20firming%20up,%20so%20in%20the%20end%20I%20just%20pinched%20off%20bits%20with%20a%20metal%20spoon%20and%20plopped%20them%20onto%20parchment-lined%20baking%20sheets.%20They%20spread%20to%20a%201-1/2%20inch%20diameter%20when%20baked.%3C/p%3E%3Cp%3EThe%20spiciness%20of%20the%20ground%20cloves%20and%20cherry%20and%20chocolate%20flavors%20is%20perfectly%20balanced%20and%20they%20are%20exquisite%20with%20a%20cup%20of%20hot%20tea.%20I%20think%20they%20are%20more%20of%20cookie%20for%20an%20adult%20palate,%20being%20not%20too%20sweet%20or%20gooey%20or%20eye-catching.%20The%20texture%20is%20wonderful%20too.%20They%20are%20crisp,%20yet%20chewy%20and%20are%20not%20brittle,%20so%20they%20will%20make%20good%20candidates%20for%20holiday%20gift%20packages.%3C/p%3E%3Cp%3EHere%20then%20is%20my%20version%20of%20Basler%20Brunsli,%20my%20new%20found%20holiday%20favorite%20confection:%3C/p%3E%3Cp%3EBasler%20Brunsli%3C/p%3E%3Cp%3ECombine%20all%20ingredients%20in%20a%20medium%20bowl,%20except%20for%20egg%20whites.%20Do%20not%20give%20in%20to%20the%20temptation%20to%20add%20more%20cloves%20than%20a%20level%201/4%20tsp.%20as%20this%20flavoring%20will%20already%20be%20a%20dominant%20note%20in%20the%20finished%20product.%20And%20this%20advice%20comes%20from%20a%20baker%20who%20likes%20a%20lot%20of%20spice.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20beat%20eggs%20whites%20until%20almost%20stiff.%20Fold%20in%20almond-chocolate%20mixture%20and%20mix%20thoroughly,%20yet%20gently.%20Divide%20dough%20in%20half%20and%20maneuver%20each%20half%20into%20a%20log.%20Cover%20with%20plastic%20wrap%20and%20chill%20for%20at%20least%20one%20hour.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F.%20Place%20teaspoonfuls%20of%20cookie%20dough%20onto%20two%20parchment-lined%20baking%20sheets.%20Try%20to%20maneuver%20dough%20into%20a%20round%20shape.%20Each%20cookie%20should%20be%20separated%20by%20at%20least%20an%20inch%20or%20two%20from%20its%20cookie%20neighbor%20as%20these%20will%20spread%20while%20baking.%3C/p%3E%3Cp%3EBake%2012-15%20minutes,%20or%20until%20cookie%20tops%20are%20no%20longer%20shiny.%3C/p%3E%3Cp%3ELet%20cool%20on%20baking%20sheets%20for%20five%20minutes%20before%20gently%20removing%20them%20from%20the%20parchment%20with%20a%20slender%20spatula%20onto%20baking%20racks.%3C/p%3E%3Cp%3EMakes%202%20dozen%20cookies.%3C/p%3E%3Cp%3EI'll%20be%20linking%20this%20post%20up%20with%20Maggie%20of%20She%20Let%20Them%20Eat%20Cake%20and%20her%2012%20Days%20of%20Gluten-Free%20Christmas%20Cookies%20event%20on%20December%2012.%20Check%20back%20with%20Maggie%20then%20to%20see%20all%20the%20other%20GF%20sweets%20others%20have%20cooked%20up%20this%20holiday%20season.%20But%20do%20try%20these%20Basler%20Brunsli%20cookies%20if%20you%20enjoy%20a%20spicy,%20chewy%20cookie,%20even%20if%20it%20is%20rather%20plain-looking%20next%20to%20some%20of%20its%20showier,%20wonderfully%
