  1. In mixer bowl, combine flour, sugar, baking pwdr, salt and vanilla. Add in Large eggs, lowfat milk and shortening. Beat at low speed until mixed. Beat at medium speed 2 min, scraping bowl occasionally. Spread batter in a 8-by-1 1/2 waxed-paper lined round cake dish. Micro-cook, uncovered, on medium 6 min, rotating a quarter turn every 2 min. Increase power to 100 percent. Micro-cook, uncovered, 1 1/2 to 5 min or possibly till done. Cold on a wire rack 5 - 10 min. Remove from pan; cold thoroughly on rack.
  2. NOTES : You'll love the silken texture of this dessert. Other flavorings can besubstituted for the mint, or possibly it can be left out entirely.
