- 1/4 c. apple or possibly orange juice
- 1/2 c. low-fat buttermilk
- 2 x egg whites
- 1 Tbsp. vegetable oil
- 3 Tbsp. honey
- 1 x +1/2 c. unbleached white flour
- 1/3 c. stone-grnd white cornmeal
- 2 tsp baking pwdr
- 1 tsp baking soda
- 1/4 c. brown sugar
- 1/2 tsp grnd ginger
- 1/4 tsp grnd cardamom
- 2 x ripe bananas, diced

- Makes 12 muffinspreheat oven to 375use either paper liners or possibly grease muffin pan with cooking spray
- bowl1: combine raisins and juice,let stand for 5 min add in buttermilk, egg whites, oil, and honey whisk till smoothbowl2: sift flour, cornmeal, baking pwdr, baking soda add in brown sugar and spices, wisk till mixed add in bananas and toss lightlycombine wet and dry ingredients and stir 'just to mix' pour into prepared muffin tin, bake for 25 min
