- 1 stick butter
- 1 egg
- 2 c. flour
- 1 teaspoon soda
- 1/2 c. lowfat sour cream
- 1 teaspoon vanilla
- 4 ripe bananas (mashed)
- 1/2 c. minced nuts

- Beat sugar and butter till light and beat in egg till smooth. Add in flour and soda alternately with lowfat sour cream. Add in vanilla, bananas and nuts. Divide batter among 24 paper lined muffin c.. Bake at 350 degrees for 25 to 30 min.
