- 3 tsp Vegetable oil
- 1 x Onion, minced
- 1/2 x Garlic clove, minced
- 1 x Banana
- 1 tsp Curry pwdr
- 1 c. Vegetable broth
- 150 gm Rice
- 1 x Bell pepper
- 1 x Basil leaf
- 20 sm mushrooms

- Heat oil in skillet and brown onion, garlic, mashed banana and curry pwdr. Add in broth. Pre-cook rice, then add in to skillet. Cut bell pepper in 1x1 inch Pcs. Put alternating bell pepper pcs and mushrooms on skewer (Roughly 10 mushrooms and 10 bell pepper pcs per skewer). Transfer skewers to clean skillet and brown for approx.
- 4 min. Serve over rice.
