I finally did it! I bought a second pressure cooker on Amazon Black Friday. I bought the Instant Pot IP-DUO60 6Qt 7-in-1 Programmable Pressure Cooker. I'm not new to pressure cooking, as I discovered this method about 15 years ago. I've since discovered the joy of braised meals in 2/3's less the time it takes to use the Dutch oven method-- though, don't get me wrong, I love my LeCreuset products and I'm a big fan of slow-braising.

.%20%20There%20are%20a%20lot%20of%20pre-set%20cooking%20levels%20(such%20as%20stews,%20soups,%20rice%20etc.)%20%20It's%20easy!%20I%20promise.%3C/p%3E%3Cp%3EMust%20importantly--%20there%20is%20absolutely%20no%20reason%20to%20fear%20today's%20pressure%20cookers!%20%20They%20don't%20blow%20up!%3C/p%3E%3Cp%3EI've%20been%20working%20on%20adapting%20many%20of%20my%20recipes,%20such%20as%20my%20Classic%20Beef%20Stew%20and%20Braised%20Short%20Ribs%20to%20this%20Instant%20Pot,%20and%20so%20far%20so%20good%20great!%3C/p%3E%3Cp%3EMy%20husband%20loves%20Irish%20oatmeal%20(steel-cut%20oats).%20He%20loves%20the%20chewy%20texture.%20%20I%20don't%20make%20it,%20often,%20because%20it%20takes%20a%20long%20time%20to%20cook%20on%20the%20stove.%20%20I've%20seen%20methods%20where%20you%20can%20cook%20them%20overnight,%20refrigerate%20the%20pot,%20and%20then%20heat%20it%20up%20in%20the%20morning.%20%20But,%20I%20don't%20think%20of%20things%20when%20I'm%20sleepy%20and%20want%20to%20go%20to%20bed.%3C/p%3E%3Cp%3ESo,%20Mr.%20Pressure%20Cooker%20to%20the%20rescue.%20%20I%20added%201/2%20cup%20of%20steel%20cut%20oats,%201%203/4%20cups%20water,%20a%20pinch%20of%20salt%20and%20some%20oil.%20%20Why%20oil,%20I%20wondered...%20%20from%20what%20I%20read,%20it%20helps%20to%20reduce%20the%20foaming%20in%20the%20oats.%3C/p%3E%3Cp%3EI%20closed%20the%20lid,%20and%20locked%20it%20into%20place.%20I%20used%20the%20manual%20setting%20for%20High%20Pressure%20and%2010%20minutes.%20%20Once%20the%20pressure%20cooker%20beeped,%20I%20allowed%20a%20natural%20pressure%20release%20(otherwise%20called%20NPR).%20%20All%20that%20means%20is%20you%20let%20the%20pressure%20cooker%20release%20the%20steam%20naturally.%20I%20was%20pleased%20to%20see%20that%20the%20Instant%20Pot%20beeped%20alert%20me%20that%20it's%20safe%20to%20open%20the%20lid%20(the%20lid%20won't%20until%20it's%20safe).%3C/p%3E%3Cp%3EThere%20was%20a%20lot%20of%20liquid%20left,%20so%20I%20turned%20on%20the%20pressure%20cooker%20to%20the%20saut%C3%A9%20cycle,%20on%20high%20and%20cooked,%20continuously,%20until%20the%20liquid%20was%20absorbed.%20%20Total%20waiting%20time:%20about%2018%20minutes.%3C/p%3E%3Cp%3EAdd%20a%20splash%20of%20milk...%3C/p%3E%3Cp%3E...a%20splash%20of%20pure%20vanilla%3C/p%3E%3Cp%3ESpoon%20the%20oatmeal%20into%20oven-proof%20ramekins,%20and%20add%20sliced%20banana%20and%20sprinkle%20on%20some%20brown%20sugar.%20Set%20a%20rack%20on%20the%20top%20level%20and%20turn%20the%20broiler%20on.%20Set%20the%20ramekins%20on%20a%20baking%20sheet.%3C/p%3E%3Cp%3EBroil%20for%20about%20one%20minute,%20until%20bubbly%20and%20caramelized.%20Watch%20closely!%20%20(Mine%20took%20about%201%20minute%20and%2025%20seconds.)%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20I%20am%20now,%20officially,%20a%20big%20fan%20of%20steel-cut%20oats.%20%20I%20love%20Bananas%20Foster%20for%20dessert,%20so%20this%20had%20similar%20notes%20(minutes%20the%20butter,%20rum%20and%20vanilla%20ice%20cream).%20%20I%20made%20this%20twice,%20so%20we%20could%20have%20more.%20%20You%20can%20certainly%20double%20or%20triple%20the%20amounts%20to%20feed%20more%20hungry%20mouths.%3C/p%3E%3Cp%3EI%20suspect%20that%20there%20are%20many%20Instant%20Pot%20Pressure%20Cookers%20all%20wrapped%20up%20and%20under%20the%20Christmas%20tree.%20%20I've%20been%20lurking%20in%20the%20Facebook%20Instant%20Pot%20Community%20where%20there%20are%20friendly%20cooks%20from%20beginner%20to%20advanced%20levels%20who%20are%20sharing%20recipes%20and%20answering%20questions%20on%20how%20to%20use%20their%20pressure%20cooker.%3C/p%3E%3Cp%3EIt's%20really%20not%20complicated,%20and%20I%20plan%20to%20share%20more%20recipes%20with%20my%20readers.%20%20I'll%20share%20with%20you%20my%20little%20tip--%20if%20I%20have%20a%20recipe%20that%20requires%203%20hours%20of%20oven-braising,%20I%20simply%20reduce%20it%20to%20one%20hour.%20There%20are%20a%20few%20other%20things%20to%20learn--%20like%20using%20at%20least%20one%20cup%20of%20liquid,%20and%20not%20overfilling%20the%20pressure%20cooker.%20%20It%20is%20so%20fool-proof,%20that%20you%20can't%20cause%20an%20explosion.%20%20I%20can't%20say%20it%20enough.%20I%20love%20my%20pressure%20cookers!%3C/p%3E){kind=link}
