- Bring all ingredients to room temp.
- Heat oven to 350 for 15 minutes.
- Mix together the first four ingredients and press into a 9 inch springform pan, pressing some up and along the sides.
- Bake 10 minutes. Let cool.
- Place a water pan on the rack beneath the one you plan to use for the cheesecake.
- Combine mashed bananas, lemon juice with brown sugar, and cook until sugar has dissolved over a medium high heat.
- Beat cream cheese with hand mixer until smooth for 2-3- minutes.
- Gradually add sugar, then beat in one egg at a time.
- Beat in vanilla.
- Pour into pan.
- Bake for 45 minutes, then check for doneness. It is done when the center is almost set, but still wiggles a bit (center not set is about the size of a dime).
- Cool completely, then refrigerate for eight hours before decorating.
- Remove from the pan and decorate.
