My all-time favorite banana bread recipe was unseated when I came across this scrumptious streusel-topped version. A tastier bonus for a bit more effort!

- Grease bottom and one half inch up the sides of one 9x5x3-inch (or two 7 1/2 x 3 1/2 x 2-inch) loaf pans, or line with parchment paper and spray with vegetable oil; set aside.
- Combine flour, baking powder, baking soda, cinnamon, nutmeg and salt in medium-large bowl. Make a well in center of flour mixture; set aside.
- In medium bowl combine eggs, bananas, granulated sugar and cooking oil.
- Pour liquid ingredients into dry ingredients all at once, stirring just until moistened (batter should be lumpy.) Fold in walnuts gently.
- Spread batter into prepared pan(s). Sprinkle Streusel Nut Topping over batter (recipe below).
- Bake in a 350 degree oven 55-60 minutes for larger pan size, or 40-45 minutes for smaller pans, testing with a toothpick in center to insure doneness (if necessary cover loosely with foil the last 15 minutes of baking to prevent overbrowning.
- Cool in pan on wire rack 10 minutes; then remove from pan and cool completely on wire rack. (Wrap and store overnight for ease in slicing.)
- STREUSEL NUT TOPPING: In small bowl combine 1/4 cup brown sugar and 3 tablespoons flour. Using pastry blender cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup chopped walnuts.
