- Preheat oven to 350 degrees. Grease a 9-by-5-inch loaf pan with non-stick cooking spray. In a small bowl, cover apricots with warm water; let stand 10 min. Drain apricots and finely chop. In a medium bowl, combine egg, brown sugar, butter, bananas and lowfat milk. Sift flour, baking pwdr, baking soda and salt into a large bowl. Add in banana mix and stir till well blended. Stir in apricots. Spoon batter into prepared pan. Bake 50 to 55 min or possibly till a wooden pick inserted In center comes out clean. Cold in pan for 10 min, then turn out onto a rack to cold completely.
