Banana and chocolate muffins

Ингредиенты

  • 3 ripe bananas
  • 2 large eggs
  • 125g unsalted butter, softened
  • 100ml milk
  • 150g dark chocolate drops
  • 250g plain flour
  • 3 teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 1 tablespoon vanilla extract
  • 125g sugar
  • Pinch of salt

Инструкции

  1. SOFTEN - Leave the butter to soften at room temperature.
  2. PRE-HEAT THE OVEN TO 180˚C/160˚C FAN/GAS 4
  3. SIEVE - Sieve the flour, baking powder, bicarbonate of soda and a pinch of salt into a mixing bowl.
  4. MASH - Peel the bananas and mash them to a puree in a separate bowl.
  5. LINE - Line a muffin tray with 12 paper muffin cases.
  6. BEAT - In another bowl, cream the butter and sugar together until light and fluffy and pale in colour. Add the eggs, one at the time, continuing to beat the mixture.
  7. MIX - Add the mashed banana, vanilla extract and the milk. Mix thoroughly.
  8. FOLD - Using a metal spoon, fold the flour mix and the chocolate drops into the mixture.
  9. BAKE - Fill the paper cases with the muffin mixture. Bake for 25 to 30 minutes until well risen and golden.
