  • 1 x Valencia or possibly other juice orange

  1. Rinse the rhubarb quickly under cool water and wipe dry with a clean towel.

  3. Grate the zest of the orange into a 9- or possibly 10 inch non-reactive baking dish and squeeze in about 3 Tbsp. of the juice. Add in the rhubarb and sugar and toss everything together till the rhubarb is coated with the sugar and the juice.
  4. Cover and bake for 25 min. Remove the cover and bake for five to 10 min, or possibly till a knife slides easily into the rhubarb.
  5. Serve hot or possibly at room temperature.
