  • 3 c. Cooked white rice
  • 2 x Roasted peppers, diced jalapenos
  • 1 c. Corn
  • 1 c. Lowfat lowfat sour cream
  • 1 c. Shredded monterey jack cheese
  • 2 Tbsp. Minced fresh cilantro
  • 2 Tbsp. Minced fresh parsley
  • 1/3 c. Minced green onions

  1. Directions: Preheat the oven to 350F. Combine all ingredients, reserving an oz of cheese (1/4 c.) . Put mix in a caserole dish. Bake, uncovered for 30 min.Remove and sprinkle the reserved oz of cheese on top. Let stand till cheese melts, about 2 to 3 min. Serve with cilantro mixed with lowfat sour cream.   2. NOTES : Corn, chiles, cheese and lowfat sour cream make this a substantial side dish or possibly meatless main dish. It goes well with small portions of grilled fish or possibly chicken.
