Baked Grapefruit & Olive Oil Doughnuts

Baked light and fluffy doughnuts with grapefruit zest that are rolled in powdered sugar or topped with a glaze.

  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • ¼ cup white sugar
  • 2 tablespoons brown sugar (packed)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • zest of 1 grapefruit
  • 1 large egg
  • ½ cup 1% milk
  • 2 tablespoons olive oil
  • ½ cup confectioners sugar
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon water

  1. Preheat oven to 350. Spray a donut baking pan with cooking spray and set aside.
  2. In a medium mixing bowl or batter bowl, add the flours, sugars, baking powder, salt and grapefruit zest. Mix until fluffy with a whisk. Add the egg, milk and olive oil and mix until just combined.
  3. Put the batter in a zip top bag (then cut the corner off) or a pastry bag and pipe the batter into the doughnut pan.
  4. Bake for 8-12 minutes (depending on the size of the pan), or until the tops are no longer tacky.
  5. Remove from pan to a cooling rack.
  6. Use a large zip top bag and add the confectioners sugar. Add a few donuts and close the top, shake gently to coat with sugar. Serve warm or at room temperature.
