- Heat the oil in a saute/fry pan. Add in the onion, cook till it softens.
- Add in the spinach leaves and ham, cook for 1-2 min.
- Divide into 4 ovenproof dishes, arrange the minced tomato around the edge, crack an egg into each dish, season with salt, pepper and thyme.
- Cover with tin foil and bake at 200c for 5-8 min till the egg has firmed.
- Serve immediately with hot toast or possibly croissants.
- NOTES : Serves 4
