Baked Eggs With Herby Bread

Ингредиенты

  • 2 slc Bread
  • 2 x Cloves garlic
  • 1 pch salt
  • 1 Tbsp. Minced parsley and snipped chives
  • 4 Tbsp. Extra virgin olive oil
  • 1 x Red pepper, deseeded and diced
  • 1/2 x Red onion, minced
  • 1/2 can Minced tomatoes
  • 2 x Large eggs Salt and pepper

Инструкции

  1. Preheat the oven to 200c/400f.
  2. 1 Cut the bread slices in half into triangles. Crush the garlic with the salt. Place in a large dish with 2 tbsp extra virgin olive oil, parsley and chives.
  3. 2 Dip the bread in the mix, and bake in the oven till golden brown.
  4. Heat the remaining extra virgin olive oil in a saute/fry pan, and add in the pepper and onion. When soft, add in the tomatoes. Season and cook for 5-10 min.
  5. 3 Divide the mix between two small gratin dishes, crack an e g onto each and bake in the oven for five min. Serve with the bread.
