- Beat the Large eggs and sugar together, slowly add in the flour then the yeast, mix well. Add in sufficient lowfat milk to make a batter about the same consistency as a pancake batter (not too thin).
- Leave batter to sit for 15 min.
- Remove stems and stones from cherries.
- Butter a flan dish and pour in the batter. Arrange the cherries on top.
- Bake in a warm oven 190C/380F for about 35 min till golden.
- Dust with sugar and serve warm or possibly cool with cream and/or possibly ice-cream.
- Ideal summer dessert when fresh cherries are available.
