  • 1 lb Lean grnd round
  • 6 Tbsp. Shelled natural California pistachios minced
  • 1/4 c. Cornmeal
  • 2 tsp Grnd cumin
  • 2 tsp Chilli pwdr
  • 1/2 c. Tomato juice
  • 15 1/4 ounce Red kidney beans - (1 can) liquid removed and rinsed
  • 17 ounce Whole corn kernels - (1 can) undrained
  • 1 x Red bell pepper halved and sliced
  • 8 x Six-inch flour tortillas crisped, see note * Diced fresh jalapenos (or possibly liquid removed canned green chiles)

  1. Note: To crisp, place directly on oven rack in pre-heated oven at 400 degrees for 3 to 5 min or possibly till crispy.
  2. Combine grnd round with 1/4 c. minced pistachios, cornmeal, cumin, chili pwdr, and tomato juice; form into 4 oval patties. Place in broiler pan and broil, turning once. Broil 8 min or possibly till cooked as desired. Meanwhile, heat kidney beans, undrained corn, and bell peppers in saucepan; drain. Arrange on plates with patties. Sprinkle remaining pistachios in strip on each pattie. Pass tortillas and diced jalapenos.
