Рецепт Baby Pumpkin Stuffed with Ham, Walnuts and Sage; sunrise, sunset
This is the last one…..
I promise.
I still have a few left, but they’re just going to be sliced and roasted for a vegetable side dish.
I was thinking I should do something sweet with the stuffing for the last one.
I have maple syrup….
Maple syrup makes me think of pancakes and pancakes make me think of breakfast and breakfast makes me think of bacon….
An idea is born.
It was good.
Baby Pumpkin Stuffed with Ham, Walnuts and Sage
Total time: 30 minutes
Ingredients:
- 2 tiny pumpkins
- 1.5oz (45gr) walnuts, broken in half
- 3 slices Prosciutto or other dry-cured ham, roughly chopped
- 10 – 12 fresh sage leaves, roughly chopped
- 2 tbs butter
- 2 tbs maple syrup
Instructions:
Cut the top 1/3 off each pumpkin. Scoop out the seeds
Place tops and bottoms cut side down on a baking sheet and bake, 400F (200C) oven, for 15 minutes.
While pumpkins bake:
Sauté the ham and walnuts in butter for 5 minutes.
Add sage and sauté 5 minutes longer..
When pumpkins are ready fill with the stuffing, including all the butter.
Divide maple syrup and drizzle over the top
Return to the oven for 5 minutes, just to heat through.
Remove and serve with the tops.
With the shorter days of winter there is a new dog-walking routine chez nous.
We have to wait until the sun is up for one thing…. That way we can see all the bunnies.
I usually let the dogs out to race around inside the fence, with their usual morning exuberance, while I put my boots and jacket on.
They’re supposed to be quiet, and usually are. Our neighbors aren’t close but they are close enough to hear two barking dogs at dawn.
The other morning they both started barking ferociously and frantically and very, very loudly.
I pulled my boots on and ran out to see what the problem was.
There it is… In the photo.
It’s on the left side of our lane.
After the farmer finished planting the other night he left he left some of his equipment.
Obviously, this was posing an extreme threat to my brave doggies.
I put them on their leashes and headed off in the opposite direction.
When we got back, the sunrise was still rather nice so I grabbed my camera.
The sun rises just behind the farm equipment.
After taking some photos, I turned around to go have my breakfast….
And saw this rainbow heading up into the matching clouds.
We do get some incredibly beautiful skies here…..
But this time of year, I get to enjoy the sunrises with the girls as well.
Aren’t I lucky?
