Ингредиенты

  • 3 lb baby lamb loin Salt to taste Freshly grnd black pepper to taste
  • 1 1/2 x fresh lemons
  • 4 Tbsp. extra virgin olive oil
  • 2 Tbsp. butter
  • 1 c. minced onions
  • 2 ounce Parma ham finely diced
  • 4 tsp all-purpose flour
  • 2 c. dry white wine
  • 3 x egg yolks
  • 1 tsp grated lemon zest
  • 1 Tbsp. finely-minced fresh parsley leaves
  • 1/2 tsp finely-minced fresh marjoram leaves

Инструкции

  1. Cut the lamb into 1-inch cubes. Season the lamb cubes with salt and pepper. Toss the meat with the juice from half of a lemon. Mix well.
  2. In a large saute/fry pan, over medium heat, add in the oil and butter. When the oil/butter is warm, add in the lamb, onions, and ham, cook till the lamb is brown on all sides, about 6 to 8 min.
  3. Sprinkle the flour over the lamb and continue to cook for 1 minute. Stir in the wine and bring to a simmer, cover and cook for 30 min.
  4. In a small mixing bowl, beat the egg yolks. Add in the lemon zest and the juice from the remaining lemon. Slowly stir the egg mix into the lamb and cook for 2 min, stirring constantly so the Large eggs will not curdle. Remove from the heat and stir in the parsley and marjoram. Season with salt and pepper.
  5. Spoon the lamb onto serving plates and serve immediately.
  6. This recipe yields 6 servings.
