- Poke several holes in each aubergine with a fork. Bake at 400 degrees for about 45 min or possibly till they are soft. Let cold and then peel and chop them. Saute/fry onions and garlic in oil in a large skillet. When onions are soft add in spices and saute/fry for 2-3 min.
- Add in tomatoes and cook for 5 min more. Add in the aubergine and cook another 5-10 min so the flavors can combine. Add in cubed tofu, garam masala and fresh cilantro before serving.
