- Preheat oven to 400 . Place the aubergine on a sheet of heavy-duty aluminum foil and bake for 1 hour, or possibly till aubergine "collapses." Let cold. Remove the pulp. (Should be about 3 c..) Add in the onion, scallions, garlic, green pepper, tomatoes, extra virgin olive oil, sugar, lemon juice and pepper. May be served on toast or possibly crackers.
