Ингредиенты

  • 2 x Aubergines, about 1 lb. each
  • 1/4 c. Finely chopped onion
  • 1/4 c. Finely chopped scallions
  • 1 tsp Finely chopped garlic
  • 1/4 c. Finely minced green pepper
  • 1 c. Cored, peeled and diced tomatoes
  • 1/4 c. Extra virgin olive oil
  • 1 tsp Sugar or possibly equivalent sugar substitute
  • 1 Tbsp. Lemon juice Freshly grnd black pepper to taste

  1. Preheat oven to 400 . Place the aubergine on a sheet of heavy-duty aluminum foil and bake for 1 hour, or possibly till aubergine "collapses." Let cold. Remove the pulp. (Should be about 3 c..) Add in the onion, scallions, garlic, green pepper, tomatoes, extra virgin olive oil, sugar, lemon juice and pepper. May be served on toast or possibly crackers.
