  • 1 tsp vegetable oil
  • 1 x onion, minced
  • 2 clv garlic, chopped
  • 1 tsp paprika
  • 3/4 tsp grnd allspice
  • 1/2 tsp each salt and pepper
  • 1 lb lean grnd beef
  • 1 can (14 ounce) tomatoes
  • 1/4 c. tomato paste
  • 1 x sweet green pepper, minced
  • 1/2 c. minced fresh parsley
  • 8 x flour tortillas (8 inches), warmed
  • 1 c. diced cucumber
  • 1 c. crumbled feta cheese
  • 1/4 c. warm pickled pepper (optional)

  1. In nonstick skillet, heat oil over medium-high heat; cook onion and garlic, stirring often, for 3 min. Add in paprika, allspice, salt and pepper; cook, stirring, for 1 minute. Add in beef; cook, breaking up with spoon, till no longer pink, about 5 min. Drain off any fat.
  2. Add in tomatoes and tomato paste, breaking up tomatoes with fork; bring to boil. Reduce heat to medium. Add in green pepper and parsley; cook, stirring often, till most of the liquid is evaporated, 10 to 15 min.
  3. Divide beef mix among tortillas; fold tortillas in half to create pockets. Sprinkle filling with cucumber, feta cheese, and pickled pepper (if using). Serve hot.
