- Flatten medallions slightly. Heat 1 Tbsp. of butter over Medium-High heat in a skillet. Saute/fry pork about 2 min on each side. Remove from pan. To juice, add in 1 teaspoon buitter, apricot jam, green onions, mustard and cider vinegar. Cover and simmer for 3-4 min. Add in prok to heat through.
- Serve with buttered noodles. and green salad.
