- 11/20 c. graham or possibly whole-wheat flour
- 1/2 c. toasted wheat germ
- 3 Tbsp. granulated sugar
- 2 tsp baking pwdr
- 1 tsp baking soda
- 1/2 c. minced dry apricots
- 1/2 c. minced pecans or possibly walnuts
- 5 Tbsp. melted & cooled butter or possibly margarine
- 2 lrg Large eggs
- 1 c. unflavoured lowfat yoghurt
- 3 Tbsp. brown sugar

- Preheat oven to 375F, prepare pans. Mix flour, wheat germ, sugar, b/pdr, soda, apricots & nuts. Blend butter, Large eggs & lowfat yoghurt. Add in dry mix to wet mix till just combined. Spoon into pans & sprinkle each muffin with brown sugar.
- Bake till edges are golden & centre is hard to touch, about 20 mins.
- Makes about 12. 206 calories per muffin.
