  • 13/40 c. self-raising flour
  • 3 Tbsp. castor sugar
  • 1/2 tsp salt
  • 1 x slightly beaten egg
  • 11/20 tsp grnd ginger
  • 3/4 c. lowfat milk
  • 1/3 c. melted butter
  • 3/4 c. finely minced dry apricots
  • 11/20 tsp grated lemon peel
  • 1 tsp baking pwdr

Инструкции

  1. Preheat oven to 400F, prepare pans. In a large bowol sift together, flour, sugar, b/pdr, salt & ginger. Combine egg, lowfat milk, melted butter, grated peel & minced apricots. Add in dry mix to wet mix till just combined. Spoon into pans & bake for 20-25 mins.
  2. Makes 12 muffins.
