.%20I%20strongly%20believe%20there%E2%80%99s%20something%20wonderful%20in%20every%20corner%20of%20the%20world.%20It%E2%80%99s%20easy%20to%20forget%20how%20special%20things%20are%20where%20you%20live%20because%20when%20we%20live%20with%20all%20that%20special%20stuff%20we%20sometimes%20forget%20to%20appreciate%20everyday%20beauty.%20I%E2%80%99m%20guilty%20of%20that%20sometimes.%20For%20example,%20when%20people%20visit%20me%20in%20Southern%20California%20they%20always%20exclaim%20how%20%E2%80%9Cwoooonderful%E2%80%9D%20it%20would%20be%20to%20grow%20lemons%20in%20your%20very%20own%20backyard.%20Meyer%20Lemons%20no%20less.%20%E2%80%9CWhat%20a%20treat!%E2%80%9D%3C/p%3E%3Cp%3EAnd%20it%20is%20wonderful.%20I%20try%20to%20remember%20that%20everyday.%20However,%20I%E2%80%99m%20on%20a%20three%20week%20drive%20trip%20with%20stops%20in%20the%20Eastern%20Sierras,%20Central%20Oregon,%20Southern%20Washington,%20and%20Seattle%20(where%20I%E2%80%99m%20currently%20tapping%20out%20this%20post).%20The%20return%20trip%20will%20be%20a%20leisurely%20drive%20down%20through%20the%20Willamette%20Valley%20and%20Northern%20California%20coast%20before%20heading%20inland%20through%20the%20San%20Joaquin%20Valley%20back%20to%20Los%20Angeles.%20The%20point%20being,%20I%E2%80%99m%20out%20of%20my%20element.%20So,%20like%20the%20lemon%20gawkers%20who%20visit%20me%20in%20So%20Cal,%20I%E2%80%99m%20astounded%20by%20the%20fruit%20that%20grows%20here.%20Especially%20blackberries.%20Not%20only%20can%20people%20grow%20blackberries%20in%20their%20very%20own%20backyard,%20but%20blackberries%20grow%20wild%20by%20the%20side%20of%20the%20road%20%E2%80%93%20everywhere!%20Meyer%20Lemons%20are%20great,%20but%20blackberries%20make%20me%20swoon!%3C/p%3E%3Cp%3ELemon-Olive%20Oil%20Cake%20with%20Blackberries%3C/p%3E%3Cp%3ESo%20to%20honor%20the%20bounty%20I%20live%20with%20and%20the%20glory%20of%20the%20berries%20I%E2%80%99ve%20discovered%20on%20my%20journey%20I%E2%80%99ve%20stirred%20together%20a%20simple%20Meyer%20Lemon-Olive%20Oil%20Cake%20with%20Blackberries.%20I%E2%80%99ve%20included%20pistachios%20in%20this%20cake%20too.%20Can%20you%20imagine%20living%20in%20a%20place%20where%20pistachios%20actually%20grow%20on%20trees?%20It%20must%20be%20heavenly!%20GREG%3C/p%3E%3Cp%3ECake%20can%20be%20made%202%20days%20ahead.%20Store%20wrapped%20tightly%20at%20room%20temperature.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0.%20Coat%20a%209%E2%80%9D%20diameter%20cake%20pan%20with%20nonstick%20spray.%20Line%20the%20bottom%20with%20a%209%E2%80%B3%20diameter%20piece%20of%20parchment;%20oil%20the%20parchment.%3C/p%3E%3Cp%3EWhisk%20flour,%20baking%20powder,%20and%20salt%20in%20a%20small%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20an%20electric%20mixer,%20beat%20eggs%20and%201%20cup%20sugar%20until%20light%20and%20fluffy,%20about%205%20minutes.%20With%20mixer%20running,%20add%20vanilla%20and%201%20tablespoon%20lemon%20juice,%20then%20gradually%20add%20oil,%20mixing%20just%20until%20combined.%20Fold%20in%20lemon%20zest%20and%20flour%20mixture.%3C/p%3E%3Cp%3EScrape%202/3%20of%20the%20batter%20into%20prepared%20pan%20and%20smooth%20top.%20Scatter%20half%20the%20blackberries%20over%20batter%20and%20smooth%20the%20remaining%20batter%20on%20top.%20Sprinkle%20pistachios%20and%202%20tablespoons%20sugar%20all%20over.%3C/p%3E%3Cp%3EBake%20cake%20until%20a%20tester%20inserted%20into%20the%20center%20comes%20out%20clean,%20about%2050%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20bring%20remaining%20%C2%BC%20cup%20sugar%20and%20remaining%20%C2%BC%20cup%20lemon%20juice%20to%20a%20boil%20in%20a%20medium%20saucepan,%20stirring%20to%20dissolve%20sugar;%20let%20lemon%20syrup%20cool.%3C/p%3E%3Cp%3ETransfer%20hot%20cake%20(still%20in%20pan)%20to%20a%20wire%20rack%20and%20immediately%20brush%20with%20lemon%20syrup%20(use%20all%20of%20it).%20Let%20cake%20cool%20completely%20in%20pan.%20Remove%20cake%20from%20pan,%20slice%20and%20serve%20with%20remaining%20blackberries%20on%20the%20side.%3C/p%3E%3Cp%3ELemon-Olive%20Oil%20Cake%20with%20Blackberries%3C/p%3E){kind=link}
