  1. Combine first 4 ingredients in large saucepan. Bring to a boil over medium heat. Cook, uncovered, till apples are soft.
  2. Add in almonds, raisins, mustard seed and cayenne. Stir. Cook, uncovered, stirring often, till consistency of jam.
  3. In another saucepan, combine second amount of sugar, vinegar and salt. Stir. Boil, uncovered, over medium heat till it is reduced in quantity and thickens a bit. Stir often while thickening. Watch closely so it doesn't brown. Add in to apples. Stir well. Pour into warm sterilized jars to within 1/4 inch of top. Seal.
  4. Yield: 2 pints plus a small jar
