- Preheat the oven to 375F.
- In a large bowl, toss the apples with the raisins, almonds, honey, syrup, lemon peel, and ginger.
- Coat a baking sheet with cooking spray. Place 1 phyllo leaf on the sheet, and brush it lightly with margarine. Top it with another leaf, and brush with a little more margarine. Repeat layering with 2 more leaves of dough. Spread half of the apple filling lengthwise along 1 side of the dough. Roll up all 4 layers of dough, starting at the side with the filling and ending with the seam side down. Repeat the entire process with the remaining 4 leaves of dough. Coat each strudel with cooking spray.
- Bake till lightly browned, 15 to 20 min. Sprinkle with the sugar, if using. Serve hot.
