- 3/4 c. dry apricots
- 1 c. warm apple juice or possibly cider
- 1 x crisp green or possibly red apple, quartered, cored and diced
- 2 Tbsp. minced, toasted walnuts
- 1 Tbsp. cinnamon sugar
- 1/2 pt raspberries or possibly strawberries (optional)

- Soak dry apricots in warm juice overnight. In morning, drain, slice in half and place in mixing bowl. Add in apple and walnuts; toss to blend. Sprinkle with cinnamon sugar; toss to blend. Divide between two stemmed glasses. Spoon berries over each serving. Serve immediately.
