- 1 head garlic, separated into cloves
- 8 ounce ricotta cheese
- 4 ounce gorgonzola cheese
- 1 c. heavy cream
- 1/2 tsp salt
- 4 x fresh sage leaves
- 1 x minced walnuts

- Cook garlic in microwave till tender (about 15 seconds). Mince in garlic press and measure 2 Tbsp..
- Beat ricotta om medium-sized bowl till softened. Add in gorgonzola and mix till smooth. Beat in cream, salt, and chopped garlic.
- Dampen 18-inch square piece of cheesecloth and place sage leaves bottom-side-up in a pattern in center of square. Spoon cheese mix over leaves. Tie ends of cloth together to create a ball shape. Place in cheesecloth-lined strainer and allow to drain for 24 hrs in the refrigerator. Unmold cheese on serving platter.
- Decorate with minced walnuts if you like. Serve at room temperature with an assortment of crackers.
