- Put olive oil in heavy pan and heat. Add garlic and saute for 1 minute; do not burn.
- Add cayenne pepper and black pepper, saute for 1 minute.
- Add dry white wine, fresh clams, and parsley, and cover pan.
- Allow fresh clams to steam for about 3-4 minutes or until desired degree of doneness.
- If you want more broth, add a little hot water.
- Pour over cooked pasta.Sprinkle with fresh grated parmesan cheese.
