Yesterday I spent part of the day filming another segment for an episode of Studio 5 which airs today. My segment was all about onigiri (“oh-nee-gee-ree”). (My recipe for Honey Ginger Chicken Soboro Onigiri, which I made in the segment, is posted here!) Since TV time is short, I only got to make the briefest of introductions, so I thought I would give more information on all things onigiri. I’ve written about onigiri on many occasions before, and have touched on some of the basics here and there, but thought it would be helpful to pull some of them together under the roof of a single post. So here we go!

.%20(My%20recipe%20for%20Honey%20Ginger%20Chicken%20Soboro%20Onigiri,%20which%20I%20made%20in%20the%20segment,%20is%20posted%20here!)%20%20Since%20TV%20time%20is%20short,%20I%20only%20got%20to%20make%20the%20briefest%20of%20introductions,%20so%20I%20thought%20I%20would%20give%20more%20information%20on%20all%20things%20onigiri.%20%20I%E2%80%99ve%20written%20about%20onigiri%20on%20many%20occasions%20before,%20and%20have%20touched%20on%20some%20of%20the%20basics%20here%20and%20there,%20but%20thought%20it%20would%20be%20helpful%20to%20pull%20some%20of%20them%20together%20under%20the%20roof%20of%20a%20single%20post.%20%20So%20here%20we%20go!%3C/p%3E%3Cp%3EOnigiri%20is%20a%20Japanese%20rice%20ball.%20%20The%20word%20onigiri%20in%20Japanese%20means%20to%20%E2%80%9Ccompress%20or%20squeeze.%E2%80%9D%20%20Onigiri%20are%20also%20often%20referred%20to%20as%20omusubi,%20which%20means%20to%20%E2%80%9Cconnect%E2%80%9D%20or%20%E2%80%9Cbring%20together.%E2%80%9D%20%20In%20its%20simplest%20form,%20it%20is%20steamed%20Japanese%20rice,%20tossed%20with%20a%20little%20bit%20of%20salt,%20then%20molded%20into%20a%20shape.%20%20In%20our%20grocery%20stores%20here%20in%20the%20US,%20this%20rice%20is%20commonly%20sold%20as%20either%20Calrose%20rice,%20or%20sushi%20rice.%3C/p%3E%3Cp%3ESome%20of%20the%20most%20common%20shapes%20are%20triangles,%20balls%20(or%20slightly%20flattened%20balls),%20and%20barrels/cylinders.%3C/p%3E%3Cp%3EBut%20there%20are%20many%20molds%20on%20the%20market%20that%20can%20be%20used%20to%20make%20onigiri%20in%20all%20sorts%20of%20other%20shapes%20and%20sizes.%3C/p%3E%3Cp%3EOnigiri%20can%20be%20wrapped%20in%20seaweed,%20or%20any%20other%20material,%20whether%20it%20be%20a%20shiso%20leaf,%20or%20a%20thin%20egg%20crepe.%20%20The%20rice%20is%20sometimes%20tossed%20with%20a%20filling%20like%20cooked%20mukimame%20(individual%20green%20soybeans)%20or%20furikake%20(Squirrel%E2%80%99s%20favorite),%20or%20the%20filling%20is%20stuffed%20inside%20the%20rice%20ball,%20like%20tuna%20salad%20or%20umeboshi%20(Japanese%20pickled%20plum).%20%20One%20of%20the%20things%20I%20love%20about%20onigiri%20is%20that%20they%20are%20incredibly%20flexible.%20%20You%20can%20make%20them%20with%20whatever%20ingredients%20you%20like,%20and%20decorate%20them%20to%20suit%20whatever%20mood%20you%20are%20in.%3C/p%3E%3Cp%3EThese%20are%20the%20onigiri%20that%20I%20made%20to%20have%20on%20display%20for%20my%20Studio%205%20segment.%20%20These%20three%20onigiri%20show%20a%20few%20ideas%20of%20what%20you%20can%20do%20with%20a%20triangle.%20%20The%20first%20is%20wrapped%20with%20a%20strip%20of%20nori%20(seaweed)%20and%20has%20a%20face%20made%20from%20nori%20as%20well.%20%20It%20is%20filled%20with%20tuna%20mixed%20with%20a%20bit%20of%20mayonnaise%20and%20a%20couple%20drops%20of%20lemon%20juice.%20%20The%20second%20is%20plain%20salted%20rice,%20wrapped%20in%20a%20strip%20of%20nori.%20%20The%20third%20is%20plain%20salted%20rice,%20whose%20edges%20were%20rolled%20in%20toasted%20sesame%20seeds,%20and%20then%20topped%20with%20an%20umeboshi%20(Japanese%20pickled%20plum).%3C/p%3E%3Cp%3EThe%20first%20ball%20is%20rice%20mixed%20with%20some%20honey%20ginger%20chicken%20soboro%20(ground%20chicken).%20%20(Recipe%20can%20be%20found%20here!)%20%20The%20second%20ball%20is%20lightly%20salted%20rice%20mixed%20with%20some%20cooked%20peas.%20%20The%20third,%20barrel-shaped%20onigiri%20is%20made%20with%20plain%20salted%20rice%20and%20topped%20with%20a%20piece%20of%20thinly%20sliced%20ham%20and%20cheddar%20cheese,%20cut%20into%20flower%20shapes,%20and%20held%20on%20with%20a%20strip%20of%20nori.%3C/p%3E%3Cp%3EAlthough%20some%20onigiri%20look%20a%20lot%20like%20sushi,%20onigiri%20is%20not%20sushi.%20%20Sushi%20always%20uses%20a%20rice%20tossed%20with%20a%20seasoned%20rice%20vinegar,%20which%20is%20not%20used%20in%20making%20onigiri.%20%20Only%20plain%20steamed%20rice,%20seasoned%20with%20a%20bit%20of%20salt%20is%20used%20in%20onigiri.%3C/p%3E%3Cp%3EThe%20history%20of%20onigiri%20goes%20way%20back.%20%20There%20are%20references%20in%20an%2011th%20century%20text%20to%20rice%20balls.%20%20This%20traditional%20Japanese%20food%20is%20now%20available%20at%20every%20convenience%20store%20in%20Japan,%20as%20it%20makes%20a%20fantastic%20food%20to%20grab%20and%20eat%20on%20the%20go.%20%20Where%20people%20in%20other%20countries%20might%20grab%20a%20sandwich%20for%20lunch,%20the%20Japanese%20eat%20onigiri.%20%20Because%20they%20are%20so%20portable,%20last%20for%20several%20hours%20after%20being%20made,%20and%20can%20be%20eaten%20without%20plates%20or%20utensils,%20they%20are%20also%20perfect%20for%20picnics%20and%20barbecues.%3C/p%3E%3Cp%3EMy%20first%20meal%20in%20Japan%20was%20an%20onigiri,%20and%20it%E2%80%99s%20now%20one%20of%20the%20things%20I%20make%20most%20often%20for%20my%20kids%20lunches%20and%20for%20myself%20as%20an%20afternoon%20snack.%20%20All%20you%20need%20to%20get%20started%20is%20some%20Japanese%20rice%20and%20salt.%20%20But%20if%20you%20want%20any%20other%20tools,%20here%20
