I am loving the combination of cherries and chocolates, and before you know it, I might venture out and bake a Black Forest Cake. But, I am not quite there yet and so I am experimenting with the flavours, without having to make the actual cake. A few weeks ago I made a chocolate cherry sourdough cake - well, actually I made two. And as soon as the second one was devoured I decided to make a new version using my new favourite flavour combination. The most amazing thing is that Dave, who is not a cherry lover, loved this cake. It came about when I tried to make a batch of my hot chocolate spoons with 90% Lindt Chocolate. The chocolate split for some reason. I poured off the cocoa butter and used the mixture for my cake. I based this recipe on one I had previously done for a chocolate marmalade cake which had a lovely marble effect. This one does not have the same effect as the cherry jam was dark to start off with, but you can see swirls of chocolate through the cake.

Amarula Chocolate Swirl Cake Recipe

Ingredients:

Method:

For the chocolate swirl

Melt the chocolate over a double boiler

Mix in the Amarula and set aside

For the cake

Preheat the oven to 180° Celsius

Prepare a rectangular baking tin

Cream the butter and the sugar

Add the jam and mix in

Add the eggs one at a time mixing in each one completely before adding the next one

Add the baking powder

Add the flour a tablespoon at a time

Mix until the batter is smooth

Pour the batter into the baking tin

Pour in 75g of the Amarula chocolate and run the spatula through the batter to mix the chocolate through the mix

Bake for 30 minutes and allow to cool before removing from the tin

I would like to give a bottle of Amarula to my friend Tami. She is one of my friends who lives inside my phone and who is always there for me. Also, it is her birthday today so this is a special happy birthday wish!

I would give her the bottle of Amarula together with the non perishable ingredients to make this cake. She is an amazing baker so I know she will enjoy baking this.
