  1. 1. Scald 1/2 c. of the heavy cream with the sugar, stirring to dissolve the sugar. Pour the warm sweetened cream over the minced chocolate in a large bowl and stir till the chocolate is melted and the mix is smooth. Set aside to cold completely.
  2. 2. When the chocolate mix is cold, whip the remaining 1 1/4 c. of heavy cream with the almond extract just till stiff; don't overbeat. Fold the whipped cream into the chocolate mix. Use as soon as possible.
