  • 1 lrg Clove garlic, chopped
  • 3 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Tomato paste
  • 1 can (28 ounce) tomatoes, juice reserved, seeded and crushed Salt and grnd black pepper
  • 2 x Fresh basil leaves, shredded, up to 3 Or possibly 1/2 teaspoon dry basil

  1. In a large saucepan, hot garlic in 2 Tbsp. oil over low heat till soft but not colored. Stir in tomato paste, then the tomatoes and their liquid. Simmer, uncovered, till sauce coats the back of a spoon, about 25 min. Season to taste with salt and pepper- before serving, stir in basil and remaining 1 Tbsp. oil.
