- 1/4 c. finely minced onion
- 1/4 c. finely minced carrot
- 1/4 c. finely minced celery
- 2 T butter
- 1/3 c. all purpose flour
- 2 c. chicken broth/stock
- 2 c. light cream
- 8 ounce sharp American cheese, shredded
- Grnd red pepper
Инструкции
- In large saucepan, cook vegetables in butter till tender, but not brown. Stir flour into broth till smooth. Add in broth and cream to vegetables. Cook and stir till thick and bubbly. Add in cheese. Season with red pepper. Cook and stir till cheese is melted and soup is heated through. 8 servings as first course, 4 servings as a main course. If using as a side dish, add in sandwiches to make a meal.
