%20They%20probably%20think%20I%20am%20eating%20poorly%20because%20what%20I%20post%20up%20here%20and%20B)%20I%20think%20they%20may%20be%20a%20little%20embarassed%20of%20me.%20%22Oh%20that%20Janis,%20you%20know%20she%20always%20says%20silly%20things%22.%20Youngest%20child%20syndrome....%20Ya%20know.%20Uh%20oh,%20I%20may%20have%20shared%20too%20much%20here%20just%20because%20I%20wanted%20you%20to%20see%20this%20picture:%3C/p%3E%3Cp%3ENow%20see%20the%20dish%20was%20amazing.%20We%20have%20made%20it%20before.%20It%20is%20from%20my%20Crush's%20cookbook%20%22Blue%20Ginger%22.%20There%20is%20a%20problem%20here%20though.%20Evidence%20One:%20Blue%20towel%20sitting%20in%20picture.%20Not%20a%20good%20thing%20but%20I%20am%20too%20busy%20cooking%20to%20really%20stage%20what%20we%20are%20making.%20I%20don't%20think%20you%20can%20really%20cook%20for%20company%20AND%20take%20awesome%20pictures%20unless%20your%20guests%20really%20don't%20mind%20you%20playing%20with%20their%20food.%20Evidence%20Two:%20Stick%20of%20butter%20sitting%20there.%20What%20the%20hell%20is%20up%20with%20that?%20Evidence%20Three:%20Goo%20on%20the%20cutting%20board%20that%20subject%20is%20sitting%20on.%20Oh%20well...%20Lets%20move%20on.%20I%20will%20never%20be%20on%20anyones%20%22top%2010%22%20list.%20That%20doesn't%20matter%20though%20because%20my%20eaters%20think%20I%20am%20tops.%3C/p%3E%3Cp%3EWe%20went%20to%20Whole%20Foods%20to%20get%20this%20Sushi%20grade%20tuna.%20It%20was%20a%20good%20piece%20of%20fish.%3C/p%3E%3Cp%3EIt%20was%20diced%20up%20and%20kept%20on%20ice%20until%20ready%20to%20use%20(like%20in%20the%20next%205%20minutes).%3C/p%3E%3Cp%3ELayers%20of%20tabiko%20and%20caviar%20and%20ahi%20are%20tamped%20down%20in%20a%20mold.%20After%20unmolding,%20cream%20is%20put%20on%20the%20top%20with%20the%20garnish%20of%20chive.%20I%20can%20not%20tell%20you%20how%20much%20I%20love%20this%20dish.%20Almost%20as%20much%20as%20I%20love%20Ming.%3C/p%3E%3Cp%3EAhi%20Tuna%20Parfait%3C/p%3E%3Cp%3EBlue%20Ginger%20Cookbook%20-%20Ming%20Tsai%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EVinaigrette:%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20To%20make%20the%20vinaigrette,%20combine%20the%20mustard,%20vinegar,%20oil,%20and%20tobiko%20in%20a%20small%20bowl.%20Season%20with%20the%20salt%20and%20pepper%20and%20whisk%20lightly.%3C/p%3E%3Cp%3E2.%20In%20a%20small%20chilled%20bowl,%20whip%20the%20cream%20until%20stiff%20peaks%20form.%20Reserve.%3C/p%3E%3Cp%3E3.%20Fill%20a%20large%20bowl%20with%20ice.%20Place%20a%20medium%20bowl%20in%20the%20ice%20and%20add%20the%20tuna,%20Tabasco%20sauce,%20chopped%20chives,%20and%20olive%20oil.%20Season%20with%20salt%20and%20pepper%20to%20taste%20and%20mix%20lightly.%3C/p%3E%3Cp%3E4.%20Spray%20the%20insides%20of%20four%201-%20to%201%201/2-inch%20ring%20molds,%20or%20tuna%20cans%20with%20tops%20and%20bottoms%20removed,%20with%20nonstick%20cooking%20spray.%20Layer%20the%20tuna%20mixture%20and%20caviars%20in%20the%20molds%20as%20follows:%20one-eighth%20of%20the%20tuna,%20one-fourth%20of%20the%20tobiko,%20one-eighth%20of%20the%20tuna,%20one-fourth%20of%20the%20osetra.%20Press%20down%20lightly%20on%20the%20parfaits%20after%20each%20layer%20with%20the%20bottom%20of%20a%20Tabasco%20bottle%20(it's%20the%20perfect%20size)%20or%20the%20butt%20end%20of%20a%20whisk.%20Top%20the%20layers%20with%20a%20thin%20layer%20of%20the%20cream,%20smooth%20to%20cover,%20and%20unmold%20cream%20side%20up%20onto%20white%20serving%20plates.%20Or%20use%20the%20Tabasco%20bottle%20to%20push%20the%20parfaits%20from%20the%20bottom,%20then%20carefully%20lift%20them%20onto%20a%20plate.%3C/p%3E%3Cp%3E5.%20Garnish%20each%20portion%20with%202%20chives.%20Drizzle%20the%20vinaigrette%20around%20and%20serve%20with%20demitasse%20spoons.%3C/p%3E){kind=link}
