%20and%20earl%20grey%20lavender%20tea,%20served%20fittingly%20in%20a%20purple%20pot.%3C/p%3E%3Cp%3EThat%20is%20a%20snippet%20of%20my%20Tasmanian%20holiday,%20I%20hope%20I%20haven't%20bored%20you%20with%20too%20many%20pictures!%20%20And%20onward%20with%20the%20recipe...%3C/p%3E%3Cp%3EThese%20were%20the%20cookies%20that%20I%20meant%20to%20take%20with%20me%20on%20the%20plane,%20but%20ran%20out%20of%20time%20to%20make.%20%20So%20I%20compromised%20and%20made%20them%20when%20I%20got%20back.%20%20Generally,%20I%20like%20to%20make%20baked%20goods%20of%20the%20portable%20variety%20to%20bring%20with%20me%20if%20I'm%20travelling%20long%20distance%20-%20be%20it%20road%20trip,%20plane%20trip,%20boat%20trip%20(which%20hasn't%20happened%20yet.%20%20Does%20anyone%20own%20a%20boat%20and%20would%20like%20to%20take%20me%20sailing?%20%20I'll%20bring%20cookies).%3C/p%3E%3Cp%3EThis%20shortbread%20would%20definitely%20have%20traveled%20well;%20it's%20firm%20and%20filling,%20holds%20well%20on%20its%20own,%20and%20is%20able%20to%20sustain%20you%20through%20those%20random%20hunger%20cravings%20that%20are%20inevitable%20when%20travelling%20(I%20hope%20this%20isn't%20just%20me).%20%20You%20can%20skip%20the%20chocolate%20drizzle%20on%20top%20if%20you%20think%20it's%20too%20messy,%20but%20once%20the%20chocolate%20sets%20it%20packs%20up%20neatly.%20%20I%20really%20recommend%20going%20the%20extra%20mile%20and%20melting%20the%20chocolate,%20it%20pairs%20perfectly%20with%20the%20oats.%3C/p%3E%3Cp%3EThese%20cookies%20remind%20me%20of%20Digestives,%20which%20I%20loved%20to%20munch%20on%20as%20a%20kid.%20%20They're%20like%20a%20more%20sophisticated%20version%20of%20an%20oatmeal%20cookie,%20which%20I%20think%20is%20one%20of%20those%20baked%20goods%20that%20just%20scream%20homemade%20comfort,%20and%20leaves%20you%20feeling%20nourished%20and%20content.%3C/p%3E%3Cp%3EDon't%20just%20think%20it's%20a%20typical%20oatmeal%20cookie,%20though%20-%20it%20also%20has%20all%20the%20classic%20shortbread%20qualities:%20buttery%20crumbling%20in%20your%20mouth%20at%20the%20first%20bite%20and%20begging%20to%20be%20eaten%20with%20a%20mug%20of%20tea%20or%20coffee.%20%20The%20oats%20+%20chocolate%20+%20sea%20salt%20combination%20is%20one%20that%20I%20would%20definitely%20use%20again.%20%20I%20hope%20you'll%20try%20these%20cookies,%20even%20if%20you're%20not%20planning%20a%20trip%20any%20time%20soon,%20they'll%20let%20you%20feel%20comforted%20and%20satisfied%20just%20where%20you%20are.%3C/p%3E%3Cp%3EOat%20Shortbread%20with%20Dark%20Chocolate%20Drizzle%20and%20Sea%20Salt%3C/p%3E%3Cp%3EAdapted%20from%20Sweet%20Amandine%3C/p%3E%3Cp%3EMakes%20about%2020%20cookies%3C/p%3E%3Cp%3EPut%20the%20oats%20into%20a%20food%20processor%20and%20pulse%20until%20powdery.%20%20If%20there%20are%20some%20large%20flakes%20of%20oats%20still%20in%20there%20that's%20fine,%20leave%20them%20in%20for%20texture.%20%20Pour%20the%20oat%20flour%20into%20a%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3ECream%20together%20butter%20and%20sugar%20in%20the%20food%20processor.%20%20Add%20the%20vanilla%20and%20egg%20and%20process%20until%20combined.%20%20Add%20the%20oat%20flour,%20flour,%20salt%20and%20nutmeg%20and%20process%20until%20a%20dough%20is%20formed%20-%20it%20will%20be%20very%20sticky.%3C/p%3E%3Cp%3EOn%20a%20piece%20of%20baking/parchment%20paper,%20sprinkle%20on%20a%20small%20handful%20of%20rolled%20oats%20and%20raw%20sugar.%20%20Turn%20the%20cookie%20dough%20onto%20the%20lined%20surface%20and%20roll%20into%20a%20log,%20using%20the%20baking%20paper%20to%20help%20form%20a%20shape.%20%20The%20oats%20and%20sugar%20should%20coat%20the%20outside%20of%20the%20log.%20%20Wrap%20in%20cling%20film%20and%20refrigerate%20for%20at%20least%201%20hour%20(you%20can%20refrigerate%20it%20overnight%20as%20well).%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20175C/350F.%20%20Line%20a%20baking%20sheet%20with%20baking%20paper.%3C/p%3E%3Cp%3ETake%20the%20cold%20log%20out%20of%20the%20fridge%20and%20slice%20off%20coins%20of%20cookies%20a%20little%20less%20than%201/2%20inch%20thick.%20%20Place%20on%20the%20baking%20sheet%20about%201%20inch%20apart%20and%20bake%20for%2016-18%20minutes,%20or%20until%20golden%20and%20firm.%20%20Take%20out%20of%20the%20oven%20and%20place%20on%20a%20rack%20to%20cool.%3C/p%3E%3Cp%3EMeanwhile,%20melt%20the%20chocolate%20over%20a%20double%20boiler.%20%20Cut%20a%20tiny%20corner%20off%20a%20small%20ziplock%20bag%20and%20pour%20the%20chocolate%20in%20(letting%20it%20cool%20a%20little%20first.%20Put%20the%20ziplock%20in%20a%20tall%20glass%20to%20make%20transferring%20the%20chocolate%20easier).%20%20Zigzag%20the%20chocolate%20over%20the%20cooled%20shortbread%20and%20sprinkle%20immediately%20with%20a%20small%20pinch%20of%20sea%20salt.%20%20Wait%20about%2020-30%20minutes%20for%20the%20chocolate%20to%20set%20(I%20put%20it%20in%20the%20freezer%20for%20about%205%20minutes%20just%20to%20speed%20it%20up).%20%20Enjoy%20with%20tea%20or%20coffee.%3C/p%3E){kind=link}
