It's no secret, I am not a big squash fan. In fact it's one of my least favorite vegetables. My CSA (local farm fresh veggies delivered weekly to your door) sent me yet another trillion apples and a giant butternut squash. Instead of crying about it I decided to make it a challenge. Make squash that I like. You can trick yourself into anything I thought to myself. Remember when I tricked myself into thinking those crunchy Japanese Squid Snacks were in fact pork rinds. Yup, it worked for a minute until the oily over fishy taste came through. I suppose a lot of people would be just as disgusted by pork rinds. To them I say this "you are joyless and have no class". %20sent%20me%20yet%20another%20trillion%20apples%20and%20a%20giant%20butternut%20squash.%20%20Instead%20of%20crying%20about%20it%20I%20decided%20to%20make%20it%20a%20challenge.%20%20Make%20squash%20that%20I%20like.%20%20You%20can%20trick%20yourself%20into%20anything%20I%20thought%20to%20myself.%20%20Remember%20when%20I%20tricked%20myself%20into%20thinking%20those%20crunchy%20Japanese%20Squid%20Snacks%20were%20in%20fact%20pork%20rinds.%20%20Yup,%20it%20worked%20for%20a%20minute%20until%20the%20oily%20over%20fishy%20taste%20came%20through.%20%20I%20suppose%20a%20lot%20of%20people%20would%20be%20just%20as%20disgusted%20by%20pork%20rinds.%20%20To%20them%20I%20say%20this%20%22you%20are%20joyless%20and%20have%20no%20class%22.%20%20Anyways,%20I%20was%20determined%20to%20make%20a%20squash%20dish%20that%20didn't%20make%20me%20cringe.%3C/p%3E%3Cp%3EThe%20end%20result%20was%20Curried%20Butternut%20Squash%20and%20Jonagold%20Apple%20Soup%20with%20Bacon,%20Fresh%20Thyme,%20and%20Peppered%20Rye%20Croutons.%20%20I%20roasted%20the%20squash%20and%20a%20couple%20of%20jonagold%20apples%20with%20butter,%20salt,%20and%20pepper%20until%20nice%20and%20caramelized%20and%20soft.%20%20I%20removed%20the%20skins%20and%20seeds%20and%20threw%20the%20flesh%20into%20a%20blender.%20%20In%20the%20meantime%20I%20rendered%20the%20fat%20out%20of%20a%20couple%20slices%20of%20bacon%20and%20cut%20some%20dark%20rye%20bread%20into%20cubes.%20%20I%20set%20aside%20the%20bacon%20on%20a%20paper%20towel%20lined%20plate%20and%20then%20I%20seasoned%20the%20croutons%20with%20salt%20and%20fresh%20ground%20pepper%20and%20tossed%20them%20in%20the%20bacon%20fat%20until%20crispy.%20%20I%20heated%20up%204%20cups%20of%20homemade%20veggie%20stock%20(so%20easy%20and%20way%20better%20than%20the%20canned%20stuff)%20and%20added%20a%20few%20ladles%20full%20into%20the%20blender%20with%20the%20squash%20and%20apple%20flesh.%20%20Season%20with%20salt,%20pepper,%201%20Tbsp%20curry%20powder,%20and%20a%201/2%20Tbsp%20of%20fresh%20thyme.%20%20Blend%20until%20smooth,%20strain%20and%20add%20the%20liquid%20gold%20to%20the%20rest%20of%20the%20veg%20stock.%20%20Simmer%20until%20it%20thickens.%20%20Garnish%20with%20the%20rye%20croutons,%20bacon,%20and%20fresh%20thyme.%3C/p%3E%3Cp%3EI%20was%20surprised%20how%20delicious%20this%20soup%20was.%20%20It's%20a%20serious%20stick%20to%20your%20ribs,%20make%20you%20feel%20all%20cozy%20kind%20of%20soup.%20%20I%20could%20see%20eating%20eating%20a%20small%20bowl%20of%20this%20with%20a%20grilled%20apple%20and%20brie%20grilled%20cheese.%20%20While%20I%20don't%20see%20myself%20eating%20roasted%20squash%20anytime%20soon,%20I%20do%20see%20myself%20making%20this%20soup%20again.%20%20And%20again,%20and%20again.%20%20Yum%20yum.%3C/p%3E){kind=link}
