%20I%20couldn't%20stand%20the%20texture%20of%20the%20meat%20with%20the%20mushy%20pasta,%20and%20that%20sauce.%20%20%20UGH%20.%20.%20.%20%20When%20you%20know%20better%20you%20do%20better.%3C/p%3E%3Cp%3EOnce%20I%20got%20out%20on%20my%20own%20I%20started%20experimenting%20and%20trying%20my%20own%20thing.%20%20%20I%20think%20jarred%20pasta%20sauces%20these%20days%20are%20really%20quite%20good%20compared%20to%20that%20original%20sauce%20my%20mom%20used,%20but%20a%20good%20tomato/bolognese%20sauce%20is%20so%20easy%20to%20make%20from%20scratch,%20I%20would%20never%20use%20a%20jarred%20one,%20except%20in%20a%20pinch.%20%20From%20scratch%20is%20the%20best%20of%20all,%20and%20it%20is%20such%20a%20simple%20sauce%20to%20make.%3C/p%3E%3Cp%3EThis%20recipe%20that%20I%20am%20showing%20you%20today%20is%20the%20result%20of%20probably%20thirty%20or%20so%20years%20of%20my%20trial%20and%20testing%20of%20what%20worked%20for%20me%20and%20what%20didn't.%20%20An%20Italian%20purest%20would%20probably%20say%20it's%20not%20Italian.%20%20I%20am%20no%20purest.%20%20I%20only%20know%20what%20tastes%20good%20and%20this%20tastes%20mighty%20good.%20%20Trial%20and%20error.%3C/p%3E%3Cp%3EThis%20is%20how%20I%20used%20up%20some%20of%20that%20bottle%20of%20red%20wine%20which%20came%20in%20that%20Wine%20and%20Cheese%20Feast%20gift%20hamper%20from%20Hampergifts.%20%20They%20say%20you%20should%20never%20use%20a%20wine%20to%20cook%20with%20that%20you%20wouldn't%20drink.%20%20I%20don't%20drink%20wine,%20but%20I%20believe%20that%20to%20be%20true.%20%20In%20any%20case%20that%20bottle%20of%20wine%20went%20very%20well%20in%20this%20sauce.%3C/p%3E%3Cp%3EThe%20secret%20is%20to%20brown%20the%20meat,%20onions%20and%20garlic%20off%20and%20then%20add%20the%20wine%20and%20allow%20it%20to%20almost%20evaporate%20until%20adding%20the%20remaining%20ingredients.%20%20This%20really%20concentrates%20the%20essence%20of%20the%20wine%20into%20the%20flavour%20of%20the%20sauce%20and%20makes%20for%20a%20really%20delicious%20sauce%20indeed.%20%20Other%20than%20that%20I%20have%20experimented%20through%20the%20years%20with%20my%20own%20combination%20of%20herbs%20and%20spices%20and%20I%20do%20believe%20that%20this%20is%20one%20of%20the%20best%20bolognese%20sauces%20anyone%20could%20ever%20hope%20to%20eat.%20%20Authentic%20or%20not.%20%20It%20is%20beautiful.%20%20Simple.%3C/p%3E%3Cp%3E*A%20Really%20Good%20Bolognese%20Sauce*%3C/p%3E%3Cp%3EMakes%206%20servings%3C/p%3E%3Cp%3EJust%20the%20way%20I've%20always%20done%20it.%20%20Simple.%20Delicious.%20%20Easy.%20%20A%20hearty%20sauce%20that%20can%20be%20used%20on%20top%20of%20spaghetti,%20in%20lasagnas%20and%20bakes,%20or%20as%20the%20Toddster%20enjoys%20it,%20ladled%20over%20potatoes.%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20large%20saucepan.%20%20%20Add%20the%20onion%20and%20peppers.%20%20Cook,%20stirring%20for%20several%20minutes,%20until%20softened.%20%20Crumble%20in%20the%20ground%20beef%20and%20garlic.%20%20Dry%20scramble%20until%20the%20beef%20is%20no%20longer%20pink.%20%20Pour%20on%20the%20wine.%20%20Bring%20to%20the%20boil%20and%20then%20boil%20it%20until%20the%20wine%20has%20almost%20evaporated.%20%20Add%20the%20remaining%20ingredients,%20with%20the%20exception%20of%20the%20Parmesan.%20%20Bring%20to%20the%20boil,%20then%20reduce%20to%20a%20very%20low%20simmer.%20%20Set%20a%20cover%20on%20top,%20slightly%20ajar.%20%20Simmer%20over%20very%20low%20heat%20for%20about%20an%20hour,%20stirring%20occasionally.%20%20If%20you%20think%20it%20is%20getting%20too%20thick%20you%20can%20thin%20it%20with%20a%20bit%20of%20beef%20stock%20if%20necessary.%20%20Add%20the%20cheese%20rind,%20or%20grated%20Parmesan.%20%20%20Cover%20again%20and%20cook%20for%20another%20half%20an%20hour.%20%20Prior%20to%20serving%20discard%20the%20rind%20and%20the%20bay%20leaf.%20%20The%20sauce%20is%20now%20ready%20to%20use%20as%20you%20wish.%3C/p%3E%3Cp%3ENote:%20%20Any%20leftovers%20can%20be%20frozen%20in%20containers%20for%20up%20to%20six%20months.%20%20Just%20thaw%20and%20reheat%20as%20needed.%3C/p%3E%3Cp%3EThe%20Toddster%20had%20his%20ladled%20onto%20a%20pile%20of%20fluffy%20mash.%20%20%20There%20is%20just%20no%20accounting%20for%20taste%20I%20guess!%20%20In%20any%20case%20he%20was%20quite%20happy%20with%20it%20that%20way%20and%20I%20was%20happy%20with%20my%20nice%20bowl%20of%20pasta.%20%20You%20can't%20ask%20for%20much%20more%20than%20that!%3C/p%3E){kind=link}
