%20away,%20we%20were%20well%20aware%20that%20other%20people%20were%20out%20in%20the%20world,%20part%20of%20the%20maddening%20holiday%20crowds,%20buying%20their%20gifts.%20%20If%20only%20they%20could%20get%20a%20glimpse%20of%20Kathe%20and%20I,%20spending%20time%20together%20having%20fun,%20while%20making%20gifts%20ourselves%20%E2%80%93%20there%E2%80%99s%20always%20next%20year!%3C/p%3E%3Cp%3EAs%20Kathe%20walked%20out%20my%20door%20two%20hours%20later,%20my%20two%20other%20friends%20(Suzy%20and%20Jackie)%20walked%20in%20and%20the%20second%20phase%20of%20holiday%20gift%20making%20began.%20Suzy,%20who%20couldn%E2%80%99t%20believe%20what%20Kathe%20and%20I%20had%20created%20together,%20right%20away%20was%20inspired%20and%20began%20mixing%20her%20granola%20ingredients.%20While%20her%20granola%20baked,%20my%20friends%20helped%20me%20package%20the%20rest%20of%20my%20food%20in%20cellophane%20bags.%20I%20chopped%20and%20assembled%20a%20quick%20salad,%20and%20we%20sat%20together%20enjoying%20a%20quick%20lunch,%20as%20the%20sweet%20aroma%20of%20honey%20almond%20granola%20filled%20my%20kitchen.%3C/p%3E%3Cp%3EChocolate%20Peanut%20Brittle%3C/p%3E%3Cp%3EMakes%20one%20sheet%3C/p%3E%3Cp%3EThis%20peanut%20brittle%20is%20simple%20to%20make%20since%20it%E2%80%99s%20done%20in%20the%20microwave.%20I%20like%20to%20use%20a%20microwave%20safe%20non-glass%20(plastic)%20bowl%20so%20that%20the%20ingredients%20don%E2%80%99t%20burn.%20Since%20the%20syrup%20gets%20incredibly%20hot,%20make%20sure%20to%20wear%20an%20oven%20mitt%20when%20spreading%20the%20mixture%20onto%20parchment%20paper.%20Break%20the%20brittle%20into%20nice%20size%20pieces%20and%20package%20in%20decorative%20cellophane%20bags%20for%20holiday%20gifts.%3C/p%3E%3Cp%3ELine%20a%20baking%20sheet%20with%20parchment%20paper.%20Melt%20the%20chocolate%20in%20the%20microwave.%20Place%20the%20chocolate%20in%20a%20microwave%20safe%20bowl.%20First%20cook%20the%20chocolate%20on%20high%20for%20one%20minute.%20Stir%20and%20cook%20again%20in%2030%20second%20intervals%20until%20smoothly%20melted.%20Spread%20onto%20parchment%20paper%20and%20harden%20in%20a%20cool%20place.%3C/p%3E%3Cp%3EIn%20a%20large%20microwave%20safe%20bowl,%20combine%20light%20corn%20syrup,%20sugar%20and%20peanuts.%20Stir%20together%20and%20cook%20on%20high%20heat%20for%20four%20minutes.%20Stir%20well%20and%20cook%20for%20another%204%20minutes.%20Add%20the%20butter%20and%20cook%20for%20two%20more%20minutes.%20Stir%20well%20and%20the%20remove%20from%20microwave%20and%20quickly%20add%20the%20vanilla%20extract%20and%20baking%20soda.%20Stir%20and,%20as%20the%20mixture%20gets%20foamy,%20quickly%20spread%20the%20peanut%20mixture%20evenly%20on%20the%20layer%20of%20chocolate.%20You%E2%80%99ll%20need%20to%20work%20quickly%20and%20carefully%20since%20it%20hardens%20very%20quickly%20and%20is%20incredibly%20hot.%3C/p%3E%3Cp%3ELet%20the%20brittle%20cool%20and%20then%20break%20into%20pieces.%3C/p%3E%3Cp%3EComments%3C/p%3E%3Cp%3EBe%20the%20first%20to%20add%20a%20comment%20using%20the%20form%20below!%3C/p%3E%3Cp%3ESubmit%20a%20Comment:%3C/p%3E){kind=link}
