,%20rice%20and%20pasta%20salads,%20gazpacho,%20cheeses,%20fruit,%20and%20other%20edibles,%20all%20packed%20up%20in%20various%20non-glass%20containers%20as%20per%20track%20rules).%20Then%20there%20was%20this%20luscious%20cold%20zucchini%20salad,%20inspired%20by%20one%20of%20Laurie%20Colwin's%20essays%20from%20her%20book%20%22Home%20Cooking%22.%3C/p%3E%3Cp%3EYou%20start%20with%20a%20platter%20of%20fried%20zucchini.%3C/p%3E%3Cp%3EI%20used%20three%20largish%20zucchini,%20which%20kept%20me%20stationed%20over%20a%20large%20cast-iron%20frying%20pan%20for%20a%20good%20while%20the%20day%20before.%20I%20breaded%20my%20zucchini%20with%20a%20mixture%20of%20brown%20rice%20flour%20and%20chickpea%20flour.%20They%20were%20moist%20enough%20after%20slicing%20to%20not%20require%20any%20eggy%20painting%20to%20make%20the%20flour%20adhere.%20After%20I%20drained%20and%20cooled%20these%20fried%20zucchini%20slices,%20I%20layered%20them%20with%20dabs%20of%20an%208%20oz.%20log%20of%20goat%20cheese,%20chopped%20parsley%20and%20basil,%20and%20sliced%20bits%20of%20a%2012%20oz.%20jar%20of%20roasted%20red%20peppers.%20Salt%20and%20pepper%20went%20between%20the%20layers,%20they%20got%20a%20splash%20of%20olive%20oil%20and%20vinegar%20and%20that%20was%20a%20wonderful%20salad%20that%20was%20delicious%20at%20room%20temperature%20the%20next%20day%20and%20kept%20well%20under%20the%20hot%20temperatures%20during%20our%20al%20fresco%20track%20picnic.%3C/p%3E%3Cp%3ENow,%20to%20focus%20more%20attention%20on%20Colwin's%20delightful%20book,%20Home%20Cooking,%20which%20is%20the%20featured%20selection%20for%20Cook%20the%20Books,%20the%20online%20foodie%20book%20club%20started%20by%20me,%20my%20buddy%20Deb%20of%20Kahakai%20Kitchen%20and%20my%20buddy%20Jo%20of%20Food%20Junkie,%20Not%20Junk%20Food.%20This%20book%20was%20published%20in%201988,%20and%20has%20been%20in%20my%20home%20library%20since%20shortly%20thereafter.%20Colwin%20was%20just%20a%20bewitching%20writer;%20she%20was%20witty,%20self-deprecating,%20passionate%20about%20the%20things%20she%20loved,%20and%20her%20descriptions%20of%20dinner%20parties%20(even%20the%20ones%20that%20went%20awry)%20are%20mouthwatering.%3C/p%3E%3Cp%3EMy%20favorite%20essay%20is%20entitled%20Kitchen%20Horrors,%20and%20I%20can%20read%20and%20reread%20this%20comic%20chapter%20and%20still%20chuckle%20out%20loud.%20There%20are%20so%20many%20disasters%20described%20in%20its%20pages,%20but%20none%20more%20hilarious%20than%20the%20strange%20English%20dessert%20Colwin%20attempted%20to%20make%20for%20an%20Easter%20dinner,%20called%20Suffolk%20Pond%20Pudding.%20It%20involved%20a%20sugar-encrusted%20lemon%20atop%20some%20butter%20and%20sugar,%20wrapped%20in%20a%20suet%20crust%20and%20then%20steamed%20in%20a%20kettle%20for%20FOUR%20HOURS.%20Well,%20that's%20enough%20description%20for%20me,%20and%20I%20certainly%20wouldn't%20want%20to%20have%20to%20ingest%20it,%20but%20Colwin%20sallied%20forth%20and%20when%20she%20produced%20her%20dessert,%20the%20comments%20on%20its%20appearances%20included%20suggestions%20that%20it%20looked%20like%20a%20baked%20hat%20and%20the%20Alien.%20The%20taste%20produced%20further%20editorial%20commentary:%20%22This%20tastes%20like%20lemon-flavored%20bacon%20fat%22,%20%22I'm%20sure%20it's%20wonderful,%20I%20mean,%20in%20England%22,%20and%20the%20straight-forward%20%22This%20is%20awful%22.%20Ha!%3C/p%3E%3Cp%3ESadly,%20Colwin%20died%20at%20the%20tragically%20young%20age%20of%2048%20from%20a%20heart%20attack%20(her%20descriptions%20of%20her%20go-to%20comfort%20food,%20rosti,%20may%20have%20been%20a%20complicating%20factor),%20so%20there%20are%20not%20many%20other%20Colwin%20titles%20to%20read%20through,%20though%20there%20is%20a%20sequel%20to%20this%20book,%20More%20Home%20Cooking,%20to%20look%20forward%20to.%3C/p%3E%3Cp%3EMy%20zucchini%20salad%20was%20inspired%20by%20an%20essay%20in%20Home%20Cooking,%20entitled%20Red%20Peppers.%20In%20it,%20Colwin%20describes%20a%20favorite%20dish%20from%20an%20East%20Side%20restaurant%20that%20she%20didn't%20get%20to%20often%20enough.%20It%20involved%20layers%20of%20sauteed%20zucchini%20slices%20and%20pimento%20strips%20garnished%20with%20olive%20oil,%20fresh%20garlic%20and%20lemon%20juice,%20which%20sounds%20great%20too.%3C/p%3E%3Cp%3EDeb%20is%20hosting%20this%20current%20round%20of%20Cook%20the%20Books,%20so%20be%20sure%20to%20check%20back%20at%20our%20book%20club%20website%20after%20the%20September%2024th%20deadline%20to%20see%20Deb's%20roundup%20of%20all%20the%20Home%20Cooking%20posts.%3C/p%3E){kind=link}
