%3C/p%3E%3Cp%3EIt%20took%20me%20until%20now%20%E2%80%93%20a%20mere%202%20weeks%20before%20my%20favorite%20holiday%20of%20the%20year%20%E2%80%93%20to%20dawn%20with%20the%20realization%20that%20It%E2%80%99s%20Beginning%20to%20look%20a%20lot%20like%20Christmas.%3C/p%3E%3Cp%3ETHE%20Tree%20@%20Rockefeller%20-%20This%20is%20on%20my%20way%20to%20work%20everyday%3C/p%3E%3Cp%3ECamels%20in%20Rockefeller%20Center?%20I'm%20still%20trying%20to%20figure%20this%20one%20out...something%20about%20the%203%20wise%20men?%20Someone%20please%20enlighten%20me!%3C/p%3E%3Cp%3EEven%20my%20office%20building%20is%20participating%20in%20the%20Christmas%20Spirit%20by%20bringing%20out%20these%20gorgeous%20bright%20red%20ornaments!%3C/p%3E%3Cp%3EChristmas%20everywhere%20you%20go.%20This%20picture%20was%20sent%20to%20me%20by%20Brian,%20on%20business%20in%20the%20UK.%20100s%20of%20Santas%20gathering%20underneath%20the%20Edinburgh%20Castle!%3C/p%3E%3Cp%3ESo%20now%20that%20the%20Christmas%20Spirit%20has%20fully%20consumed%20me,%20I%20feel%20compelled%20to%20create%20dishes%20evoking%20memories%20of%20Christmas%20past.%20Chestnuts%20have%20always%20been%20one%20of%20my%20favorite%20winter%20munchies.%20The%20sweet%20succulent%20delights%20conjure%20images%20of%20the%20family%20enjoying%20these%20roasted%20delicacies%20while%20gathering%20%E2%80%99round%20to%20watch%20movies%20in%20our%20pajamas.%20%20We%20found%20so%20many%20ways%20to%20enjoy%20them%20%E2%80%93%20drizzled%20with%20honey,%20sprinkled%20with%20salt,%20dipped%20in%20soy%20sauce.%20%20But%20in%20all%20these%20years%20of%20savoring%20them,%20I%E2%80%99ve%20never%20actually%20created%20a%20dish%20with%20them.%20So%20last%20night,%20I%20decided%20to%20work%20it%20into%20a%20simple%20weeknight%20pasta%20dish%20%E2%80%93%20letting%20the%20sweet%20smoky%20flavor%20of%20the%20chestnuts%20mingle%20with%20the%20savory%20taste%20of%20the%20mushrooms,%20and%20tying%20it%20all%20up%20with%20the%20peppery%20zest%20of%20the%20arugula%20and%20buttery%20nuttiness%20of%20parmesan%20cheese!%3C/p%3E%3Cp%3EGathering%20the%20Goodies:%3C/p%3E%3Cp%3EGetting%20Into%20the%20Spirit:%3C/p%3E%3Cp%3EPrepare%20the%20Chestnuts:%20Cut%20the%20shell%20with%20an%20%E2%80%9CX%E2%80%9D%20where%20the%20shell%20bulges%20outward.%20Place%20the%20chestnuts%20in%20a%20dish%20and%20completely%20cover%20with%20water%20and%20soak%20for%2020%20minutes.%20Place%20in%20a%20baking%20dish%20and%20roast%20at%20400%20%20for%2020%20to%2025%20minutes.%20Remove%20from%20oven,%20peel,%20and%20chop!%3C/p%3E%3Cp%3EBring%20water%20to%20a%20boil,%20season%20with%20salt,%20and%20boil%20the%20egg%20pasta%20for%206-8%20min,%20until%20cooked.Drain%20and%20toss%20with%20a%20little%20olive%20oil%20to%20prevent%20sticking.%3C/p%3E%3Cp%3ESaute%20the%20sliced%20mushrooms%20in%20oil%20and%20a%20little%20bit%20of%20soy%20sauce%20until%20the%20aroma%20fills%20the%20air%3C/p%3E%3Cp%3EPour%20in%20the%20egg%20mixture%20and%20scramble%20everything%20up.%3C/p%3E%3Cp%3EAdd%20the%20chopped%20chestnuts%20and%20cook%20for%20another%20few%20minutes.%20Stir%20in%20the%20pasta%20and%20the%20remaining%20olive%20oil%20and%20mix%20until%20everything%20is%20well%20coated.%3C/p%3E%3Cp%3EAdd%20in%20half%20of%20the%20parmesan%20cheese,%20and%20sprinkle%20in%20tarragon%20and%20more%20salt%20&%20pepper%20to%20season.%3C/p%3E%3Cp%3ETurn%20the%20heat%20on%20low,%20add%20in%20the%20arugula%20and%20toss%20some%20more,%20making%20sure%20the%20arugula%20does%20not%20actually%20cook%20and%20stays%20crisp.%3C/p%3E%3Cp%3EScoop%20onto%20a%20plate,%20decorate%20with%20more%20parmesan%20flakes,%20and%20fill%20your%20tummy%20with%20Christmas!%3C/p%3E%3Cp%3EVariations:%3C/p%3E%3Cp%3EIf%20you%20don%E2%80%99t%20have%20or%20don%E2%80%99t%20like%20black%20mushrooms,%20Portabello,%20oyster,%20or%20white%20mushrooms%20would%20be%20just%20as%20tasty%3C/p%3E%3Cp%3EIf%20you%20can%E2%80%99t%20eat%20mushrooms,%20try%20other%20meaty%20veggies%20like%20eggplant.%20%20Other%20proteins%20like%20tofu%20or%20soy%20protein%20veggie%20%E2%80%9Cmeat%E2%80%9D%20products%20would%20blend%20well%20too.%3C/p%3E%3Cp%3ETry%20substituting%20spinach%20or%20even%20cabbage%20for%20arugula%20(although%20the%20cabbage%20would%20be%20better%20when%20well%20cooked)%3C/p%3E%3Cp%3EIndulge%20yourself%20and%20make%20a%20buttery%20cream%20sauce%20with%20herbs%20like%20tarragon,%20basil,%20thyme,%20or%20sage%3C/p%3E%3Cp%3ENo%20one%20should%20be%20a%20scrooge,%20but%20if%20you%20can%E2%80%99t%20stand%20chestnuts%20(say%20it%20aint%20so),%20you%20can%20also%20use%20hazelnuts,%20walnuts,%20or%20almonds%3C/p%3E){kind=link}
